{"id":27,"date":"2016-10-13T22:38:24","date_gmt":"2016-10-13T22:38:24","guid":{"rendered":"http:\/\/askalbe.com\/?p=27"},"modified":"2016-10-13T22:38:24","modified_gmt":"2016-10-13T22:38:24","slug":"chicken-divan","status":"publish","type":"post","link":"https:\/\/askalbe.com\/?p=27","title":{"rendered":"Chicken Divan"},"content":{"rendered":"<p><b>Chicken Divan<\/b><\/p>\n<p>(Picture Coming)<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">I\u2019ve been making this dish for years and it is easily one of my absolute favorites. \u00a0When I was away in college in Philadelphia, my mom would bring this to me whenever she visited and while the smell made everyone in my room run out, it was that taste of home that I so craved. \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">It is no secret that my mother is one of the best cooks around. \u00a0She\u2019s always been the inspiration in all of my cooking and let\u2019s face it, most of my recipes are hers or at least based on hers. \u00a0I try to add a more technical element to the recipes and sometime it makes a difference while other times it ruins the very dish I\u2019m trying to create. \u00a0Either way, this dish is one of the few dishes that I can say (and her admit) that I have improved from the original. \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Chicken Divan. \u00a0Not sure if that is how it\u2019s spelled or if this is actually a classified as a Chicken Divan but there is our version and it will easily convert you to our side. \u00a0I love making this dish in the winter and fall, there is just something about casserole comfort foods during chilly weather nights that makes it better. \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Ingredients<\/b><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 lb of chicken breast cubed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 &#8211; 3 tbsp dried tarragon<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tbsp onion powder<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tbsp garlic powder<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp crushed red pepper<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 large head of broccoli cut into bite site florets<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1.5 cup of rice (uncooked)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 can cream of mushroom soup<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 can cream of broccoli soup<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup sherry<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup chicken stock<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tbsp butter<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tbsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd &#8211; 1 cup pepperidge farms seasoned breadcrumbs (in a blue label)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 package of shredded sharp cheddar (2 cups)<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Recipe<\/b><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Start by preheating the oven to 350 degrees and warming some olive oil in a skillet over medium high heat then add in the chicken, onion powder, garlic powder, tarragon, and red pepper. Toss some salt and pepper in as well.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Saute until the chicken is just cooked<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Deglaze with the sherry wine and cook for 2 &#8211; 3 minutes<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add in the chicken stock along with the cream of mushroom and cream of broccoli soups. \u00a0Mix it all well until combined then add in the rice.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Lower heat to medium low, cover, and simmer stirring occasionally until the rice is cooked. \u00a0Depending on what the consistency is, you may have to add more rice or broth throughout as it cooks. \u00a0You want a somewhat tight mixture with a little juice coming through<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Once you hit that sweet spot, add in the cooked broccoli and about 1 cup of sharp shredded cheddar &#8211; remove from heat.
