Ingredients
- 2 Lbs Ground chicken
- 2 Large eggs
- 1.25 Cups Panko breadcrumbs divided
- 1/3 Cup Frank's hot sauce
- 3 Scallions sliced thin and separated
- 1 Tsp garlic powder
- 1 Tsp Onion Powder
- 1/2 Cup Shredded pepper jack cheese
- 1 Cup Sweet Baby Ray's Buffalo sauce to coat

Instructions
- Preheat oven to 450 degrees and line baking sheet with parchment paper.
- Crack eggs in large bowl and whisk.
- In the same bowl, add ground chicken, all whites of scallions, half of the green scallions, 1 cup panko, and 1/3 cup Franks, and pepper jack cheese.
- Add garlic powder, onion powder, and 1 Tsp salt and pepper (or to taste).
- Mix ingredients until thoroughly incorporated (with clean hands or utensil).
- Roll mixture into 1 tablespoon sized meatballs.
- Roll meatballs in to remaining panko breadcrumbs and place onto lined baking sheet.
- Lightly spray meatballs with cooking spray.
- Bake for 15-20 or until golden brown.
- Remove and place in large bowl with buffalo sauce to coat... do this in batches.
- Place back on baking sheet and bake for 5-10 minutes or until desired crispiness.
- Enjoy with your choice of blue cheese dip or whatever your heart desires, preferably with an IPA.
