Chimichurri Steak Tacos

Steak Tacos with Cilantro Chimichurri

I came across this recipe on FoodGawker randomly but am so glad I did.  The steak was so flavorful and tender, the marinated onions were spot on and the chimichurri sauce was BOMB.  When I first put together the marinade for the steak I was a little worried as it smelled strongly of soy sauce but the end result was magical.  

This dish works anytime of the year as long as you don’t mind grilling in the snow!  Word to the wise – all these components are heavy in the citrus department so feel free to adjust accordingly.  

Marinade

Ingredients

  • 2lbs steak – preferably flank or similar cut
  • 1 large sweet onion sliced
  • Juice of 1 orange
  • Juice of 2 limes
  • ⅓ cup soy sauce
  • ⅓ cup olive oil
  • Pinch of sugar
  • 4 – 5 cloves minced garlic
  • ½ cup chopped cilantro
  • 1 – 2 tsp of cumin, coriander, and chili powder

Instructions

  • Mix it all up in bowl (except for the sliced onions), place steak and onions in a gallon size ziplock bag, pour marinade over the steak and let is soak up the juices for about 3 hours.  Don’t be put off if the marinade turns your steak a little grey.
  • Get your grill on high heat.  You may want to use a grill pan for the onions or else they may fall through your grill.  Put the onions on first and let them sizzle for about 5 – 10 minutes.  
  • While the onions are getting happy, throw on your steak and get a good sear.  About 4 – 5 minutes a side.
  • Take everything off the grill and let the steak sit for 5 – 10 minutes so it can incorporate those tasty juices.  Slice the steak thin against the grain.  

Chimichurri Sauce

Ingredients

  • 1 cup packed cilantro chopped
  • 1 cup parsley chopped
  • Juice of one lime
  • ½ cup olive oil
  • ¼ white onion
  • 2 – 3 cloves garlic
  • 2 tsp cumin
  • 2 tsp coriander
  • Salt to taste
  • ½ to 1 full jalapeno

Instructions

  • In a food processor combine, jalapeno, garlic, and onion. Pulse a few times.
  • Then add in the cilantro and parsley and pulse a few more times.
  • Add in the rest of the ingredients and adjust the taste as needed.

PUT IT ALL TOGETHER

Now that your steak has been sitting and your sauce is ready, take some tortillas and throw them on the grill.  Toast them for about 45 seconds on each side and remove.

Start with the tortillas, throw some steak down, cover it with some cheddar cheese or whatever you want – maybe some kind of lime cilantro slaw, pour some chimichurri over the steak, add salsa or fresh pico and ENJOY!
