Instant Pot Chicken Tostadas
These are bomb... especially if you are in hurry to make dinner during the work week. 20 minutes and you're done!
Instructions
Preheat oven to 450 degrees
Deseed and dice poblanos. Dice onion
Heat instant pot under high on saute. Add some oil and throw in poblanos and onion cooking until soft and lightly browned.
Lay chicken boobs on top of peppers an onions.
Mix water and seasoning mix then pour over chicken and peppers.
Cover and set instant pot to high pressure for 8 minutes. Natural release for 10 minutes
Oil tortillas on both sides and put on baking sheet and cook for 6 minutes on each side until golden brown.
Take chicken out and pull. Turn the instant pot back on saute and add a tbsp of flour whisking until desired consistency. Add shredded chicken back to pot.
