Easy Instant Pot Chili
This one goes out to all of our neighbors whom have been begging for the recipe! This recipe is easy, malleable, and most importantly quick - plus the longer you let it sit and on low heat, the better it gets.

  1. Set your instant pot to sauce on high and wait until it says HOT before adding in the following:
  2. While it is preheating, dice up your onion and pepper(s). Open your cans of tomatoes. Open the black beans and drain the goo.
  3. Once the pot says it is hot, throw a dash of canola oil in and add the ground beef along with some S&P and saute for a few minutes while breaking up the meat till your desired consistency.
  4. When the beef is 1/2 cooked, drain some of the fat and add in the peppers and onions along with a little more S&P. Saute for a few more minutes until beef is cooked and pepper and the onions are softened.
  5. Open up one of those chili packets and throw it in allowing it to cook for a minute to enhance the flavor.
  6. Pour in the cans of tomatoes and beans and stir well. Cook for a couple more minutes and see where your taste is. Add in some of the other chili seasoning packet as needed. You can even add in some more cumin/garlic/onion powder as needed as well. Keep in mind that the flavors will become bolder as it pressure cooks so don't go too overboard.
  7. Once the flavors are close to what you want, hit cancel on the instant pot and add 1/4 cup of water. We need some steam for the pressure and we can always thicken the chili afterwards if needed.
  8. Put the lid on and secure it. Press the pressure cook button until it says HIGH pressure and NORMAL cook. Set the time for 15 minutes.
  9. While it is cooking, clean everything else up so you don't get yelled at by your significant other 😉
  10. Once it has finished cooking, allow it to natural release for 10 minutes (the counter will start counting upwards). After the timer reaches 10 minutes, open the valve to let any additional steam out and carefully open the pot.
  11. Give everything a good stir and check the consistency. Give it a taste adding additional seasonings as needed. If the consistency is too watery, saute the pot pack to saute and reduce until it is where you want it.
  12. Serve it up! Or put it on crock-pot mode on medium and let it meld until you're ready to serve. Don't forget the toppings!
